   Yōkan is a traditional Japanese confection (wagashi) made from red bean paste (anko), agar, and sugar, forming a firm, jelly-like block that is sliced and served as a sweet treat, often with tea.

     It has a rich history, originating from a Chinese meat jelly, and evolved in Japan with Zen monks substituting meat for beans, eventually becoming a popular sweet with many variations like neri yōkan (firm) and mizu yōkan (watery, served chilled).
